I love making salads and salad dressings and this salad is so easy and delicious and is my 'go to' salad recipe, when I have unexpected guests, as it looks really fancy too. This also includes my homemade balsamic vinaigrette recipe.
1 bunch or bag of rocket leaves
1 pear, cubed or sliced lengthwise
2 rashers of crisp fried bacon

For the balsamic dressing
125ml cup good balsamic vinegar
65ml olive oil
1 Tbsp dijon mustard

Directions Preparation:10min › Ready in:10min
Toast pine nuts in a dry (without oil) hot frypan, being careful not to scorch or burn the nuts. Toss or mix constantly until lightly browned. Let cool.
Gently toss all salad ingredients together and place in a serving bowl.
For the dressing, simply put all ingredients into a shaker or salad dressing container, cover and shake about 20 seconds or until the oil looks emulsified. Serve with salad.
