Rocket salad with pears, walnuts, bacon and blue cheese

    10 minutes

I love making salads and salad dressings and this salad is so easy and delicious and is my 'go to' salad recipe, when I have unexpected guests, as it looks really fancy too. This also includes my homemade balsamic vinaigrette recipe.

    10 people made this

    Serves: 2

    • 1 bunch or bag of rocket leaves
    • 1 pear, cubed or sliced lengthwise
    • 2 rashers of crisp fried bacon
    • 80g gorgonzola or blue cheese, cubed/crumbled
    • 60g toasted pine nuts
    • 2 thinly sliced cooked beetroot (optional)
    • For the balsamic dressing
    • 125ml cup good balsamic vinegar
    • 65ml olive oil
    • 1 Tbsp dijon mustard
    • 1 tbsp honey
    • 1/4 tsp dried thyme
    • 1 clove garlic, pressed or very finely chopped, optional
    • a good grind of sea salt
    • a grind of fresh pepper

    Preparation:10min  ›  Ready in:10min

    1. Toast pine nuts in a dry (without oil) hot frypan, being careful not to scorch or burn the nuts. Toss or mix constantly until lightly browned. Let cool.
    2. Gently toss all salad ingredients together and place in a serving bowl.
    3. For the dressing, simply put all ingredients into a shaker or salad dressing container, cover and shake about 20 seconds or until the oil looks emulsified. Serve with salad.

This was a yummy salad but way too much balsamic vinegar spoilt the dressing!  -  02 Jan 2012
