Matzo Cocoa Brownies

Using matzo cake meal and cocoa powder, you can make tasty matzo brownies to eat during passover. Filled with chopped walnuts, then underbaked to keep them moist.

Serves: 24 

  • 5 eggs
  • 2 1/2 cups (500g) caster sugar
  • 1 1/4 cups (310ml) vegetable oil
  • 1 1/4 cups (100g) matzo cake meal
  • 1 1/2 cups (130g) cocoa powder
  • 1 1/4 cups (150g) chopped walnuts

Preparation:10min  ›  Cook:35min  ›  Ready in:45min 

  1. Whisk eggs and sugar. Add oil. Mix in matzo cake meal and cocoa. Add nuts or use as a topping.
  2. Bake in a greased 23cm x 33cm baking tin at 160 degrees C for 30 minutes. Check the brownies and return to the oven an additional 5 minutes if needed. The secret to moist brownies is to underbake them.


I put nuts on top rather than in the brownies for two reasons: They make the top look good without having to ice them and for those who don't or can't eat nuts, they are easily removed without having to search for them.
