For each stack you make, take 4 slices of chorizo, four slices of tomato and four thick slices of mozzarella plus a few basil leaves.
Layer them in the following way: basil, tomato, mozzarella and chorizo and continue this until your slices are used, this allows the flavour from the chorizo to flavour the cheese and tomato.
Now put your toothpick through the middle of the stack just to hold it together while cooking.
Place on a baking tray and cook for a max of 10 minutes. Check them after 5 minutes as some ovens are hotter than others, you will know when they are nearly done as the cheese will just have started to melt on the outside.
When done, take them off of the tray, let them rest for a minute or so, then take the cocktail stick out. They should hold together.
Place them in the middle of a mixed leaf salad and drizzle with some extra virgin olive oil.
