    This is a very rich brownie recipe! The texture gets even better if you leave it overnight in the fridge. Serve with ice cream.

    Serves: 16 

    • 375g butter
    • 375g of the best dark chocolate you can afford
    • 2 cups (250g) plain flour
    • 1 teaspoon salt
    • 6 eggs
    • 1 teaspoon vanilla essence
    • 500g caster sugar
    • 2 cups (300g) walnuts (optional)

    1. Preheat oven to 170 degrees C and lightly grease or line a 20cm square baking tray.
    2. Melt butter and chocolate in a heat resistant bowl in microwave or in a bowl over hot water.
    3. Mix together flour and salt then beat in the eggs, vanilla and sugar.
    4. Add the chocolate mixture to the rest of the ingredients. If you adding walnuts, fold them into the mixture also. Pour into the baking tray. Bake for 40 minutes in the centre of the oven.
    5. Once cooked leave to rest for 10-15 minutes.
