Pan Fried Silverbeet

    The delicate flavour of silverbeet comes out beautifully when it is pan fried with bacon, and any bitterness fades with cooking.

    Serves: 2 

    • 4 slices bacon, chopped
    • 2 tablespoons butter
    • 3 tablespoons fresh lemon juice
    • 1/2 teaspoon garlic paste
    • 1 bunch silverbeet, stems removed, leaves cut into 1-inch pieces
    • salt and pepper to taste

    1. Heat a frypan over medium heat. Place the chopped bacon in the frypan and cook until the fat separates from the meat.
    2. Add the butter. Stir in the lemon juice and garlic paste. Add the silverbeet. When the leaves begin to wilt, place a cover on the frypan and increase heat to medium-high. Cook, covered, for 4 minutes. Season with salt and pepper.
