    This mouthwatering dessert combines apples, blueberries, raspberries and blackberries with a sponge cake dessert and meringue topping!

    Ingredients
    Serves: 8 

    • For the sponge
    • 150g self-raising flour
    • 1 teaspoon baking powder
    • 150g caster sugar
    • 4 tablespoons water
    • 1 egg
    • 2 tablespoons golden syrup
    • For the fruits
    • 600g Granny Smith apples - cored, peeled and chopped
    • 100g caster sugar
    • 175g blueberries
    • 150g raspberries
    • 150g blackberries
    • For the fruit syrup
    • 1/2 cup (125ml) blueberry juice
    • 2 tablespoons cherry jam
    • 2 tablespoons golden syrup
    • For the jam spread
    • 1 1/2 tablespoons raspberry jam, divided
    • For the meringue
    • 3 egg whites
    • pinch salt
    • 200g caster sugar

    Directions

    1. Preheat oven to 180 degrees C. Grease bottom and sides of a 23x12cm loaf tin; dust lightly with flour.
    2. Sift together the flour and baking powder. In a separate bowl, mix together remaining cake ingredients. Add the sifted dry ingredients. Beat with an electric mixer at medium speed until smooth, about 1 minute. Pour mixture into prepared tin.
    3. Bake for 45 minutes, or until a knife inserted into the centre comes out clean. Cool for 10 minutes before removing from tin to a wire rack to cool completely.
    4. Place apples and 100g sugar into a saucepan and add cold water to nearly cover the apples. Bring to the boil; reduce heat and simmer uncovered until tender, 7 to 10 minutes. Drain. Stir the berries (drained, if using frozen) into the apple mixture; cover and set aside.
    5. In a small bowl, whisk together the blueberry juice, cherry jam and golden syrup. Set aside.
    6. Cut cooled cake into 8 slices, about 3cm thick. Spread each slice with 1/2 teaspoon raspberry jam. Arrange slices on the bottom of an 20cm square baking tin or dish, jam side up. Drizzle the fruit syrup over the slices. Spoon the mixed fruit over the top. Set aside.
    7. Reduce oven temperature to 150 degrees C.
    8. Add egg whites to a large glass or metal bowl and whisk until foamy. Add a pinch of salt. While continuing to whisk, gradually incorporate 200g sugar and continue to whisk until stiff peaks form. Spread the meringue over the fruit to the edges of the tin.
    9. Bake for 30 minutes in preheated oven until meringue is golden brown.

    Tip:

    Use either fresh or frozen berries for this delectable pud. If using frozen, just ensure that they are thawed and their liquid is drained before adding to the pudding.

    Made it vegetarian. This works well but is bery time consuming. Replacing making the sponge with using pre-prepared trifle sponges cuts down preparation time and also reduces the amount of fat. They don't need spreading with the jam mixture either, as the combined fruits are adequate on their own - this also cuts out sugar and calories, a win/win! - 29 Sep 2008
