    These little nut-stuffed dates make a great after-dinner treat with a cup of coffee. They are also perfect as food gifts for Christmas.

    Serves: 25 

    • 250g dark or cooking chocolate, chopped
    • 25 Medjool dates, stones removed
    • 25 pecan nut halves
    • 2 tablespoons sweetened shredded coconut (optional)

    1. Place the chocolate in a glass or plastic bowl. Heat in the microwave for about 2 minutes, stirring every 30 seconds, or until almost melted. Stir until smooth.
    2. Line a baking tray with aluminium foil. Stuff each date with a pecan half and place onto the baking tray. Drizzle the stuffed dates with melted chocolate, then sprinkle with coconut. Place into freezer, and freeze for 1 hour before serving.
