Pear and Apple Matzo Brei

    This makes a delicious breakfast, with roasted walnuts, apples, nashi pear, brown sugar, fresh grated nutmeg, currants, golden syrup and of course, matzo.

    Serves: 4 

    • 1/4 cup walnuts, broken into bits
    • 4 tablespoons unsalted butter
    • 1 apples, peeled and diced
    • 1 nashi pear, peeled and diced
    • 3 tablespoons brown sugar
    • 1/2 cup dried currants
    • 1/2 teaspoon grated nutmeg
    • 1/4 of a lemon, juiced and zested
    • 8 sheets kosher for passover matzo, broken into bits
    • 4 cups boiling water
    • 4 eggs, beaten
    • pinch of coarse salt, to taste
    • 2 tablespoons golden syrup

    1. Preheat oven to 180 degrees C. Line a baking tray with baking paper. Lay walnuts across baking tray then roast in oven until browned, about 10 minutes, turning half way though. Set aside.
    2. Heat a tablespoon of butter in a frying pan then saute apple and pear for a couple of minutes. Stir in brown sugar, currants, lemon juice and zest. Cover and allow to cook for about 10 minutes. Set aside.
    3. In a colander in the sink, pour the water over the broken matzo. Drain then move to a bowl. Stir in eggs, salt and golden syrup. Mix well.
    4. In a frying pan, heat the last of the butter then add the matzo and egg mixture. Cook until golden on both sides. Stir in the apple, pear and the walnuts. Enjoy.


    You can use sultanas instead of currants if you prefer.


    To keep it parve, use oil instead of butter.
