Preheat oven to 180 degrees C. Line a baking tray with baking paper. Lay walnuts across baking tray then roast in oven until browned, about 10 minutes, turning half way though. Set aside.
Heat a tablespoon of butter in a frying pan then saute apple and pear for a couple of minutes. Stir in brown sugar, currants, lemon juice and zest. Cover and allow to cook for about 10 minutes. Set aside.
In a colander in the sink, pour the water over the broken matzo. Drain then move to a bowl. Stir in eggs, salt and golden syrup. Mix well.
In a frying pan, heat the last of the butter then add the matzo and egg mixture. Cook until golden on both sides. Stir in the apple, pear and the walnuts. Enjoy.
You can use sultanas instead of currants if you prefer.
