Colcannon Potatoes

    This is a traditional Irish way of serving potatoes and cabbage that includes milk, oil, butter, salt and pepper then is served with spring onions or chives.

    Ingredients
    Serves: 8 

    • 1kg cabbage, sliced and cooked
    • 1kg potatoes, peeled, boiled and mashed
    • 1/2 cup (125ml) skim milk
    • 1 tablespoon sunflower or corn oil
    • 1 tablespoon unsalted butter
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 2 tablespoon spring onions or chives

    1. Mix the cooked cabbage with the mashed potatoes then mix well.
    2. Combine in saucepan over low heat then beat in milk, oil, butter, salt and pepper, to taste. Adjust milk until consistency is lightly creamy.
    3. Serve hot, sprinkled with spring onions or chives.
