This is a recipe for an easy to make jam sponge cake, it only takes 15 minutes to cook then it is iced with a butter icing and filled with a jam of your choice.

Serves: 8 

  • Cake
  • 1 cup (125g) flour
  • 125g margarine
  • 1/2 cup (125g) white sugar
  • 2 large eggs
  • 3/4 cup (125g) icing sugar
  • Filling
  • 3/4 cup (125g) icing sugar
  • 60g margerine
  • 250g jam

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Cake: Put the flour, margarine and sugar into a mixing bowl then break the eggs into the bowl.
  2. Mix the ingredients using an electric mixer and spoon into two round, greased cake tins about 18 cm wide and 3cm deep.
  3. Bake the cake in the oven at 200 degrees C for about 15 minutes.
  4. When the cakes are ready remove them from each tin and place on a rack to cool.
  5. Filling: Mix the icing sugar and margarine in a bowl using a wooden spoon until creamy then spoon it over one half of the cooled cake.
  6. Spread some jam over the top of the icing and place the second half of the cake on top of that.
  7. Ice the final cake and decorate as desired.
