Simple Tomato Pasta Sauce

    This is a great week night dinner that uses fresh vegetables and cooks them down to create a rich tomato pasta sauce.

    Serves: 5 

    • 3 cloves garlic
    • 2/3 red onion
    • 2 sprigs rosemary
    • 1 punnet cherry tomatoes, optional
    • 2-3 tablespoons extra virgin olive oil
    • 2 (400g) tins diced tomatoes with juice
    • 1 tablespoon sugar
    • salt and pepper, to taste

    1. Dice the garlic, onion, rosemary and cherry tomatoes.
    2. Simmer the onions and the rosemary in the olive oil until onions become almost clear.
    3. Add the garlic and simmer stirring constantly until onions are completely clear.
    4. Add the tinned tomatoes and cherry tomatoes.
    5. Taste and adjust seasonings with sugar, salt and pepper.
    6. Simmer for 10 minutes to reduce and intensify the flavour.
    7. Serve over your favourite pasta.
