Beef and Bacon Bolognaise

This is a great wholesome and filling pasta sauce packed with goodness including beef, bacon, tomato and red wine. Serve on your favourite pasta and with the remaining red wine.
1 medium onion, finely diced
2 rashers streaky bacon, unsmoked, diced
2 tablespoons extra virgin olive oil
500g lean beef mince
1 large garlic clove, crushed
250g tinned Italian tomatoes
2 tablespoons tomato paste
1/2 glass (100ml) red wine
1 teaspoon dried basil
salt and fresh black pepper, to taste
1 beef stock cube
- In a heavy frying pan or skillet gently soften the onion and bacon in the olive oil for 5 minutes.
- Turn up the heat and add the mince stirring until cooked.
- Add the rest of the ingredients, season, cover and simmer on a very low heat for 20 minutes stirring occasionally.
- Remove the lid and continue to simmer for another 20 minutes.
