Couscous Vegetable Side

This is a very easy side dish that combines freshly diced onion, capsicum, tomato and cucumber with couscous then dresses it with lemon juice and olive oil.

Ingredients
Serves: 4 

  • 1 cup couscous
  • boiling water
  • 1 teaspoon vegetable stock powder
  • 1 spring onion, finely diced
  • 1/2 red capsicum, finely diced
  • 1/2 orange capsicum, finely diced
  • 1 tomato, finely diced
  • 5cm cucumber, finely diced
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 pinch salt, to taste

Directions
Preparation:20min  ›  Ready in:20min 

  1. Pour the boiling water over the couscous and vegetable stock powder.
  2. While this is fluffing prepare your vegetables.
  3. Stir round the couscous from time to time.
  4. When cooled add your diced vegetables, oil and lemon juice.
