Couscous Vegetable Side

This is a very easy side dish that combines freshly diced onion, capsicum, tomato and cucumber with couscous then dresses it with lemon juice and olive oil.
1 cup couscous
1 teaspoon vegetable stock powder
1 spring onion, finely diced
1/2 red capsicum, finely diced
1/2 orange capsicum, finely diced
1 tomato, finely diced
5cm cucumber, finely diced
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil
1 pinch salt, to taste
- Pour the boiling water over the couscous and vegetable stock powder.
- While this is fluffing prepare your vegetables.
- Stir round the couscous from time to time.
- When cooled add your diced vegetables, oil and lemon juice.
