Cherry Tomato Sauce

    This is a great recipe for tomato sauce that uses cherry tomatoes. The extra skin seems to give a depth that I cannot get from my normal tomato recipes.

    Serves: 12 

    • 500g cherry tomatoes
    • 1 red onion, finely diced
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon diced red chilli
    • 1 teaspoon crushed garlic
    • 1 pinch Italian seasoning, to taste
    • 1 teaspoon white sugar
    • salt and pepper, to taste

    1. In a saucepan over medium-low heat combine the cherry tomatoes, red onion, balsamic vinegar, chilli, garlic, Italian seasoning, sugar, salt and pepper.
    2. Simmer for about 15 minutes then mash the tomatoes to release the juices.
    3. Continue to cook stirring occasionally until the sauce is thick; about 45 minutes.
    4. Allow to cool then cover and refrigerate until needed.

    I love this receipe. I have a lot of cherry tomatoes from my veggie patch and was excited to find this receipe. It's simply, required basic everyday ingredients and is so full of taste! It's a must try! I used a tablespoons rather than teaspoons for the garlic and chilli and will do so every time now.  -  12 Feb 2012


    I made this the other day was easy as.. got to use up some of my home grown toms and chilli very nice with sausages also used it on mini pizzas for lunch will be making this again  -  21 Mar 2013


    Easy recipe. Was quick and so yummy. Have a glut of cherry tomatoes in the garden. I added a little more garlic and used fresh chilli, and basil out of the garden as well. Going to make a double batch tomorrow now I know how good it is.  -  31 Jan 2017
