French Leek Quiche

    It's an original French recipe my mum used to make. Great to eat with a salad any time of year. Absolutely delicious!!! Can be prepared the day before and served as a entree or main.

    Serves: 6 

    • shortcrust pie pastry pressed into a 23cm fluted tart or quiche pan with a removable base
    • 20g butter
    • 3 leeks, washed and chopped
    • 1 pinch salt and black pepper to taste
    • 3 eggs, beaten
    • 1 cup (250ml) cream
    • 1 1/4 cups (155g) grated Gruyere or Swiss cheese

    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat oven to 190 degrees C.
    2. Melt butter in a large saucepan over medium-low heat. Stir in leeks and cook, stirring occasionally, for about 10 minutes, or until soft. Season with salt and pepper.
    3. Reduce heat to low. Stir in beaten eggs, cream and cheese. Pour mixture into prepared pan.
    4. Bake in preheated oven for 30 minutes or until custard is set and golden on top. Allow to sit 10 minutes before cutting the pie into wedges.
