The easiest sponge cake you will ever make - only three ingredients and a few minute preparation time.

Ingredients
Serves: 4 

  • 3 eggs
  • 1/2 cup (125g) caster sugar
  • 3/4 cup (90g) self-raising flour

Directions
Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Preheat the oven to 190 degrees C. Grease a 20 or 23 cm round cake tin.
  2. In a medium bowl, whisk together the eggs and caster sugar until light and creamy in colour. Fold in flour. Pour into the prepared cake tin.
  3. Bake in the preheated oven for 20 minutes or until the top of the cake springs back when lightly pressed. Cool in the tin over a wire rack.

Used different ingredients. I used raw sugar instead of caster, added drinking chocolate, vanilla malt and extract & golden syrup. i added honey lemon icing.. icing sugar, water, lemon honey. mix together and add when cake has cooled - 15 Oct 2009
