Lemon Curd in the Microwave

    Lemon curd is absolutely delicious on crumpets or muffins and it is a snap to make in the microwave. Enjoy!

    Serves: 16 

    • 1 cup (220g) white sugar
    • 3 eggs
    • finely grated rind and juice of 3 lemons
    • 125g unsalted butter, melted

    1. In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon rind and butter.
    2. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon.
    3. Remove from the microwave, and pour into small sterile jars. Store for up to three weeks in the refrigerator.
