Fruity Bread Pudding

    This is a bread pudding of a style which is popular in Malta. You can add different fruits and nuts depending on your personal taste.

    Serves: 10 

    • 1 tablespoon cocoa
    • 4 teaspoons caster sugar
    • 1 egg
    • 450g bread, crusts removed and bread torn into pieces
    • 1 tablespoon orange peel
    • 1 tablespoon lemon peel
    • 2 teaspoons margarine or butter
    • 200g sultanas
    • 50g desiccated coconut
    • 1 banana, sliced
    • 1 apple, sliced

    1. Preheat the oven to 180 degrees C.
    2. Whisk together the milk, vanilla essence, rum, cocoa, sugar and egg in a large bowl. Soak bread in the milk mixture. Add the margarine, orange peel and lemon peel; mix gently using a wooden spoon. Fold in the sultanas, coconut, banana and apple until evenly distributed. Put in a greased oven dish.
    3. Bake in the preheated oven until golden brown, between 45 minutes and 1 hour. Serve cold.

    Really want to cook this but once I started I realised you did not include all the ingredients. Milk, Vanilla and RUM. Can you please update the recipe ?  -  15 Nov 2012
