Apple Meringue Pie

A simple twist on a lemon meringue pie - just made with cooked apples. Let the egg whites get to room temperature in a bowl before whisking to make better meringue.
2 cups of cooked apples
2 tablespoons golden syrup
100 gm slivered almonds
3 egg whites
3 tablespoons caster sugar
- Place the apples in the base of an ovenproof dish.
- Sprinkle with the syrup and nuts.
- Whisk the egg whites till stiff and fold in the caster sugar to make the meringue.
- Place the meringue on top of the apple mixture and bake in a moderate oven for 10 minutes or until golden brown.
