Cheesy Pesto Tomatoes

These are a great appetiser for a party and super simple to make since there are only three ingredients.
10 small ripe tomatoes
1/2 cup pesto
1 cup (125g) grated Parmesan cheese
- Preheat oven to 180 degrees C.
- Cut tomatoes in half and scoop out the flesh from the centre of each half. Fill pocket with pesto and sprinkle generously with cheese. Place tomato halves in a well oiled baking dish.
- Bake in preheated oven until cheese is melted and bubbly and slightly browned. Serve warm.
