Wheatberry and Capsicum Salad

    An unusual salad with a delightful texture - cooked whole wheatberries are combined with capsicum and dressing of your choice. You can buy wheatberries at health food shops.

    Ingredients

    • 250g whole wheatberries
    • 1 red capsicum, finely chopped
    • 1 green capsicum, finely chopped
    • 150ml salad dressing

    1. Cook the wheatberries for 20 minutes in boiling water. Meanwhile, chop the capsicums.
    2. When the wheatberries are cooked, strain and rinse with cold water. Combine all the ingredients and serve!
