Serves: 6

  • 2 tablespoons vegetable oil
  • 1 onion, grated
  • 2 cloves garlic, finely chopped
  • 750g skinless chicken thigh fillets, halved
  • 3 teaspoons ground turmeric
  • 1 teaspoon chilli powder
  • 1 1/2 teaspoons salt
  • 440g can peeled and diced tomatoes
  • 2 tablespoons ghee (clarified butter)
  • 3 teaspoons ground cumin
  • 3 teaspoons ground coriander
  • 2 tablespoons grated ginger
  • 1/2 cup chopped coriander leaves

Preparation:20min  ›  Cook:55min  ›  Ready in:1hour15min

  1. Heat the oil in a large, heavy-based pan over medium-high heat. Add onions and garlic, and cook for about 2 minutes. Add the chicken and season with turmeric, chilli powder and salt. Fry gently, scraping the bottom of the pan frequently and turning the chicken.
  2. Pour in the tomatoes with their juice, cover the pan, and simmer over medium heat for 20 minutes. Uncover, and simmer for another 10 minutes to let the excess liquid evaporate.
  3. Add the ghee, cumin, coriander, ginger and coriander leaves, and simmer for another 5 to 7 minutes. Serve the chicken pieces with sauce spooned over the top.

Delicious! I don't think this would serve 6 people, it just fed 3 adults when I made it but either way it was fantastic! I haven't felt this satisfied from a curry that I made myself ever before, thank you - 31 Aug 2011

this is a simple but really tasty dish. I reduced the quantity of chilli as cannot handle too much heat nowadays, & instead of ghee used around 1tsp of butter. - 01 Aug 2010

This recipe is yummy and I will definately be making it again. I did however add some raw sugar as this is just to my taste. Thanks for submitting! - 05 Jul 2010
