Ingredients

  • 110g butter
  • 170g caster sugar
  • 2 eggs
  • 4 tablespoons milk
  • 170g self raising flour
  • zest and juice from 1 lemon
  • 3 tablespoons icing sugar

Directions
Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min 

  1. Preheat the oven to 180 degrees C and grease a 15x25cm cake tin or a ring tin.
  2. Beat the first 5 ingredients and the lemon zest together until smooth and creamy.
  3. Spoon the batter into the prepared tin and bake for 40-50 minutes.
  4. When cake is nearly done, heat the lemon juice in the microwave until warm (about 45 seconds) then mix in the icing sugar to make a syrup.
  5. Remove the cake from the tin and poke the top several times with a skewer. Drizzle the syrup over the cake while the cake is still hot.
  6. Alternatively, if lemon sauce is poured over cool cake, it gives a glaze to the top.

this was delicious the best cake I've ever made. One alteration though I added the lemon juice to the cake mix by mistake but it turned out wonderful anyway. THANK YOU - 04 Jul 2012
