    This is a great chilled eggnog, perfect for the hot days of Christmas. It's spiked with rum and scotch.

    Serves: 8 

    • 4 cups (1 litre) light cream
    • 1 cup (125g) white sugar
    • 11 egg yolks, beaten
    • 1 teaspoon vanilla extract
    • 2 cups (500ml) thickened cream
    • 2/3 cup (170ml) dark rum
    • 1/2 cup (125ml) Scotch whiskey
    • 500g vanilla ice cream

    1. In a saucepan over low heat, stir together the light cream and sugar. Whisk in egg yolks and cook until light custard forms; do not boil. Remove from heat and cool, then place in refrigerator and chill overnight.
    2. Into the chilled mixture, stir in vanilla, cream, dark rum, Scotch and vanilla ice cream. Serve cold.
