Potato Soup with Lemon

My father who passed down this fantastic recipe. We always make it on cold days. The lemon really brightens it.
8 potatoes, cubed
4 cloves garlic - peeled and sliced
6 stalks celery with leaves, chopped
1/2 teaspoon ground turmeric
2 lemons, juiced
1 chicken stock cube
salt and pepper to taste
- Place potatoes, garlic and celery into a large stockpot with water to cover. Cover and bring to a boil. Cook until potatoes are tender, about 25 minutes.
- Season with turmeric, lemon juice, chicken stock cube and salt and pepper to taste. Simmer for another 10 minutes. Mash some of the potato chunks for a thicker consistency.
