Potato Soup with Lemon

My father who passed down this fantastic recipe. We always make it on cold days. The lemon really brightens it.


Serves: 12 

  • 8 potatoes, cubed
  • 4 cloves garlic - peeled and sliced
  • 6 stalks celery with leaves, chopped
  • 1/2 teaspoon ground turmeric
  • 2 lemons, juiced
  • 1 chicken stock cube
  • salt and pepper to taste

Preparation:10min  ›  Cook:35min  ›  Ready in:45min 

  1. Place potatoes, garlic and celery into a large stockpot with water to cover. Cover and bring to a boil. Cook until potatoes are tender, about 25 minutes.
  2. Season with turmeric, lemon juice, chicken stock cube and salt and pepper to taste. Simmer for another 10 minutes. Mash some of the potato chunks for a thicker consistency.
