Easy Chocolate Cream Cheese Muffins
Cream cheese adds a deliciously silky note to these chocolate chip muffins. Perfect for someone who doesn't want to be overwhelmed with chocolate.
Ingredients

- 250g cream cheese, softened
- 60g butter, softened
- 1 egg, room temperature
- 1/2 cup cream
- 1/2 teaspoon vanilla essence
- 2 cups plain flour
- 1/2 cup white sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup chocolate chips

- Preheat oven to 200 degrees C. Lightly grease 12 muffin cups or use patty cups.
- Beat cream cheese and butter together until fluffy. Beat in egg, cream and vanilla. Sift together the flour, sugar, baking powder and salt, then stir flour mixture into cream cheese mixture until flour is just moistened. Fold in chocolate chips.
- Spoon batter into prepared muffin cups, filling them 3/4 full. Bake until tops are golden, about 20 minutes.

Absolutly Beautiful! These muffins are devine! I added a few more choc chips (as i'm a sucker for chocolate) and they were perfect! I am definately adding these to my fave recipes - 27 Mar 2010
The only tweak I made was to add extra chocolate chips. However my muffins didn't rise and had a very spongy texture. They turned out to be more like cookies than muffins. Disappointing. - 01 Mar 2011
I hesitate to give this recipe even one star. I followed this recipe exactly. Been making muffins since 1968 and have never had anything come out so awful. They not only looked unappetizing, but after cooling down, they were hard as a rock! Went directly into garbage can.
