Tiessennau Mel - Welsh honey cakes

    Tiessennau (cakes) Mel (honey) is a Welsh (Cymreag) recipe for sweet little cakes.

    Serves: 6 

    • 125g butter or margarine
    • 125g brown sugar
    • 1 egg
    • 125g Honey
    • 250g plain flour
    • 1 teaspoon cinnamon
    • ½ teaspoon bicarbonate of soda
    • ¼ cup milk (or as needed)
    • caster sugar for sprinkling

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 200 degrees C. Cream together the butter and sugar. Separate the egg yolk from the white.
    2. Beat the yolk into sugar and butter then, add the honey, gradually. Stir in the flour, bi-carb and cinnamon with a little milk as needed and mix all together lightly.
    3. Whisk the egg white into a stiff froth and fold into mixture.
    4. Half fill small patty tins with the mixture; sprinkle the top of each with caster sugar. Bake in pre-heated oven for 20 minutes.
    5. When ready sprinkle with a little more sugar if desired.

    These cakes are so yummy and moist. I added a runny lemon icing to cut through the sweet honey. A real hit with the family, little and big kids alike. Thanks  -  12 Aug 2009


    These tasted pretty good but a bit dry. I'll do it again but add more milk next time. I guessed how much 'a little milk' was ,and my mixture was splodgy rather than slightly runny. Will go for a runnier mixture next time.  -  22 Jun 2012  (Review from Allrecipes UK & Ireland)
