Sour Cream Mac and Cheese

    Cottage cheese and sour cream are the unique elements to this macaroni and cheese recipe, which is easily doubled to feed a crowd.

    Serves: 6 

    • 250g elbow macaroni
    • 250g shredded cheddar cheese
    • 375g creamed cottage cheese
    • 250g sour cream
    • 1/4 cup grated parmesan cheese
    • salt and freshly ground black pepper to taste
    • 1 cup dry breadcrumbs
    • 60g butter, melted

    1. Preheat oven to 180 degrees C. Bring a large pot of lightly salted water to a boil, add pasta, and cook until al dente. Drain.
    2. In a greased 23x33cm baking dish, mix together macaroni, cheddar cheese, cottage cheese, sour cream, parmesan cheese, salt and pepper.
    3. In a small bowl, mix together breadcrumbs and melted butter. Sprinkle topping over macaroni mixture and bake for 30 to 35 minutes, or until top is golden.

    Used different ingredients. Add 1 onion and a dozen chopped button mushrooms to the mix. Lighly cook the onions and mushrooms in a tablespoon of oil or butter. Substitute the sour cream woth the same quantity of plain yoghurt. Top with 5 pieces of bread ripped into bits and coated with 100g of melted butter. Add sliced tomatoes to the top.  -  28 Aug 2010

Awsome sounding Mackers, I also add chunks of ham, usually hamsteaks cut into bits + onion, hard boiled egg & tomato all cut into decent sized pieces.. this really fills out the recipe, gives it healthy ingredients to balance out the cheese & keeps the unique taste of Mackers & cheese Mmmm...  -  13 Sep 2010


    My mom makes a really good Macaroni and Cheese, and she is always being asked to make some for someone. She is not really a Macaroni and Cheese person herself but she loves making it for people. I tried Chuck's recipe this past Thanksgiving and it blew my Mom's out of the water. Sorry Mom! She agrees with me also. I am originally from California and we had this restaurant in downtown Los Angeles called Clifton's Cafeteria and I thought that they made the best Macaroni and Cheese in the entire world. Well, I have finally found the recipe for it. Thank you Chuck for bringing back wonderful memories and for one of the best recipes on this site. By the way, my Mom actually loves Macaroni and Cheese now, and is always wanting me to make Chuck's Favorite Mac and Cheese.
