Easy Ice Cream Base

    Before freezing, you can also add crushed biscuits, nuts, chocolate chips, coconut or any other of your favourites!

    Serves: 12 

    • 1/2 cup (125ml) cold milk
    • 1 tablespoon vanilla essence
    • 1 (400g) tin sweetened condensed milk
    • 1/8 teaspoon salt
    • 2 cups (500ml) double cream

    Preparation:10min  ›  Extra time:4hours freezing  ›  Ready in:4hours10min 

    1. In a medium bowl, stir together cold milk, vanilla, condensed milk and salt. Set aside.
    2. In a large bowl, beat double cream with an electric mixer until stiff peaks form. Fold milk mixture into whipped cream.
    3. Pour into shallow 2 litre dish, cover and freeze for 4 hours, stirring once after 2 hours or when edges start to harden. Serve or store in an airtight container up to 10 days.

    Made it healthier. I made this with homemade condensed milk, cream and skim milk. I added a bit of coffee instant granules and made it in my ice-cream maker. It was just perfect! So creamy, like italian gelatos, great taste and i don't think this could have been any better if i had used fat and sugar.  -  29 Sep 2008


    What a brilliant recipe! Thank you for sharing this wonderfully easy recipe. I always wanted to make homemade ice cream, but never had an ice cream maker. My husband is an ice cream-aholic, and he said "it's so creamy"! He wants me to make some with berries. I would like to try making chocolate, do you have any suggestions? Thanks again! PS. I have since made another batch and split it up. One batch I used fresh blueberries (not good, they were like little pellets) it would probably be much better if they had been cooked. Good news though...I put some drinking chocolate powder in the other batch and it turned out FANTASTIC! YUMMMMMMMMM! :o)  -  29 Sep 2008
