Creamy Potato and Bacon Salad

A rich and creamy potato salad with bacon to add a smoky flavour to the dish. A nice addition to any buffet table or to accompany a summer BBQ.

Ingredients

Serves: 10 

  • 2kg coliban potatoes, peeled, diced
  • 6 rashers smoked bacon
  • 1 cup (300g) whole egg mayonnaise
  • 1/3 cup diced fresh flat leaf parsley
  • salt and pepper, to taste

Directions

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Cook the potatoes in a large saucepan of boiling water until tender then drain. Cool in cold water then drain.
  2. Cook the bacon in a oiled small frying pan until crisp. Remove from the frying pan then chop into small pieces. Cool.
  3. Combine the potatoes, bacon, mayonnaise and parsley in a large bowl. Season with salt and freshly ground black pepper then toss gently.
