Poppyseed Strawberry Salad

    A simple summer salad composed of spinach, strawberries and a poppy seed vinaigrette. Quick and delicious!

    Serves: 4 

    • 1 bunch spinach, rinsed
    • 10 large strawberries, sliced
    • 2 teaspoons sugar
    • 1 teaspoon salt
    • 4 tablespoons white wine vinegar
    • 1/2 cup (125ml) olive oil
    • 1 tablespoon poppy seeds

    1. In a large bowl, mix the spinach and strawberries.
    2. In a blender, place the sugar, salt, vinegar and oil then blend until smooth. Stir in the poppy seeds. Pour over the spinach and strawberries and toss to coat.

    Altered ingredient amounts. Added some mango which worked beautifully.  -  17 Oct 2008


    This salad was good - easy to make and easy to eat. I think I would reduce the sugar...maybe even leave out all together(?) if I made this again. I reckon the strawberries I used were sweet enough to carry the salad as is.  -  17 Oct 2008


    This is an interesting one because its half fruit salad half vege salad but it went well with simple grilled fish fillets  -  17 Oct 2008
