Seafood Tortellini with Parmesan Sauce

Even including homemade pasta for the Tortellini, this recipe uses prawns and crabs that are served in a creamy parmesan sauce.

Serves: 3 

  • Pasta
  • 160g plain flour
  • 2 large eggs
  • 1/2 teaspoon cayenne pepper
  • salt and ground black pepper, to taste
  • Filling
  • 100g prawns, cooked and peeled
  • 100g crab sticks, or fresh crab
  • 250g marscapone cheese
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • salt and ground black pepper, to taste
  • Sauce
  • 100g butter
  • 2 cups (500ml) cream
  • parmesan cheese, grated
  • salt and ground black pepper, to taste
  • paprika, to garnish

  1. Pasta: Mix flour, cayenne pepper, salt and black pepper together. Make a well and break in eggs.
  2. Mix flour into eggs slowly to form dough. Knead for 10 minutes. Wrap in plastic wrap and chill for 20 minuntes.
  3. Filling: Place all the filling ingredients in a blender and whizz to a smooth paste.
  4. To Assemble: Roll out pasta and cut into 3cm circles. Put a little of the filling mix in the centre of each pasta circle.
  5. Brush edges with water then fold in half. Make sure no air is in semi-circle of pasta, seal edges.
  6. Roll each semi-circle of pasta round your little finger until two ends meet, squeeze to join together.
  7. Sauce: Melt the butter in a saucepan. Add the cream and heat gently (do not boil.)
  8. Add the Parmesan cheese and stir until melted.Season with salt and black pepper. Keep warm while the pasta cooks.
  9. Cook pasta in salted boiling water for 5 minutes. Put pasta in a bowl, cover with sauce and sprinkle with paprika.
