Popcorn Lolly Cake

    This cake is sure to be a hit at a kid's birthday party! Popcorn is mixed with melted marshmallows, soft lollies and peanuts then set in the fridge.

    Serves: 16 

    • 250g butter (reserve a good knob to grease the cake tin)
    • 32 marshmallows
    • 185g popped popcorn
    • 185g soft lollies like jelly beans, milk bottles, etc
    • 1 cup (150g) shelled unsalted peanuts
    • 200g smarties

    Preparation:10min  ›  Cook:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. Melt the butter and marshmallows in heavy saucepan over low heat. Stir often.
    2. Put popcorn in a large bowl and pour marshmallow mixture over top. Stir well to combine.
    3. Add the lollies and nuts and mix together. Pack into a greased cake tin. Allow to set in the fridge. Turn out onto a plate to serve. Cut in wedges.

    Used different ingredients. Really good! Didn't use jelly diamonds and used plain peanuts. True, it must be eaten within a couple of days or it gets gooey.  -  21 Jul 2008
