100g good-quality plain chocolate
2 egg yolks
4 tablespoons caster sugar
2 teaspoons plain flour

Preheat the oven to 230 degrees C. Butter and flour 4 ramekins or souffle pots.
In the top half of a double boiler or basin set over simmering water, heat the butter and the chocolate until chocolate is almost completely melted.
Use a hand held electric mixer beat the eggs, egg yolks and sugar together until light coloured and thick.
While beating, slowly pour the chocolate mixture into the egg mixture, then quickly beat in the flour until just combined.
Divide the mixture between the 4 prepared dishes and bake for 6 to 7 minutes. The centres of the cakes will still be quite soft. Turn dishes onto serving plates and let stand for about 15 seconds, then unmould. Serve immediately with fresh cream, if desired.
These 'cakes' were as fantastic as they possibly could be-absolutely delicious! I had my doubts given how simple the recipe is and that recipes on this website are un-tested and from home cooks (?) but these were brilliant. They're not really cakes, more puddings actually and I don't think they're designed to be turned out but 10mins seemed to be perfect timing. I used muffin tin, filled 4 holes and I cooked for 10 minutes but I think that might have been too long because the filling didn't ooze out when my sons put their spoons into them. They liked how they tasted and want me to make them again. - 13 Aug 2009
