Portuguese Yoghurt Cake

    1 hour 15 minutes

This is a super easy yoghurt cake and the best thing about it is you can change it up by using different flavours of yoghurt or adding nuts and chocolate chips, etc.

    2 people made this

    Makes: 1 cake

    • 250ml yoghurt, any flavour you like
    • 600g caster sugar
    • 250g self raising flour
    • 4 eggs

    1. Pre-heat the oven to 160 degrees C and grease a 20cm cake tin.
    2. In a mixing bowl combine yoghurt and caster sugar and beat well. Add 4 eggs, one at a time, beating after each addition.
    3. Gradually sift in the flour while mixing. Beat the batter about 30 seconds then pour into the cake tin. Bake 1 hour.

very sweet but a lovely texture split into two tins and cook for much less time.  -  13 Apr 2012  (Review from Allrecipes UK & Ireland)

Yes, it is very easy to make, but it is weird - very sweet, but texture is neither cake nor bread. Reminded me of the greaseless sponges my mother used to make after the war (yes I am that old), when there was still rationing. Bit like the sponges used for trifles. OK on the day it was made, but lack of fat meant it didn't store well. I used a cherry yoghurt, full fat, and coudn't taste the cherry in the finished cake. Won't bother with any more. I tweaked it by using 2 tubs, not 3, of sugar.  -  07 Dec 2016  (Review from Allrecipes UK & Ireland)
