Coffee and chocolate are a match made in tasty heaven with this chocolate mud cake recipe. You can add chocolate icing if you are a true chocoholic.


Makes: 1 cake

  • 285g plain flour
  • 1 teaspoon baking powder
  • 60g instant coffee
  • 300ml water
  • 140g dark chocolate
  • 400g sugar
  • pinch salt
  • 225g unsalted butter
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 1 1/2 cups desiccated coconut

Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

  1. Preheat oven to 180 degrees C.
  2. Sift flour and baking powder together into bowl.
  3. In separate bowl, dissolve the instant coffee in the 300ml water.
  4. Place dissolved coffee, chocolate, sugar, salt and unsalted butter in a saucepan, stirring over low heat until butter is melted and sugar is dissolved. Cool.
  5. Whisk eggs with vanilla essence in separate bowl.
  6. Vigorously whisk egg mixture with chocolate mixture after making sure that chocolate mixture has cooled. Mix in the flour mixture and the coconut.
  7. Pour cake into 20cm cake tin and bake for 25-30 minutes. Test the cake is done with a knife or skewer.
