This lightly crispy tofu drenched in a tangy sweet sauce is perfect for a simple midweek dinner. You can let the tofu drain while you are at work, then it's ready to cook when you come home.

Ingredients
Serves: 2
1 pack (280g) firm tofu
4 tablespoons tahini
1/2 teaspoon crushed chillies (optional)
1 tablespoon maple syrup
1 teaspoon rice wine vinegar
2 garlic cloves, crushed
1/2 tablespoon grated root ginger
1/2 tablespoon sriracha sauce
1 tablespoon tamari soy sauce
2 tablespoons coconut oil

Press the tofu for at least 1 to 2 hours to remove any extra moisture.
Mix all the ingredients except the tofu and oil in a bowl with 4 tablespoons water.
Fry the tofu in a pan over a medium heat in coconut oil until browned, about 5 to 10 minutes. Add the sauce and continue to cook for a further 5 to 10 minutes.
Serve over brown rice with steamed green vegetables sprinkled with sesame seeds and spring onions.
