Cheese and Onion Muffins

    Makes: 12 muffins

    • 250g plain flour
    • 1 teaspoon salt
    • 3 1/2 teaspoons baking powder
    • 75g grated cheese (the stronger the better)
    • 2 tablespoons crispy onions, or finely chopped fresh onions
    • 1 cup milk
    • 1/4 cup cooking oil
    • 1 egg

    1. Heat oven to 200 degrees C. Lightly grease muffin tin, or line with paper cases.
    2. Mix the flour, salt, baking powder and cheese (reserve a little to sprinkle on top) and onion together in a medium bowl.
    3. Mix the milk, oil and egg together thoroughly.
    4. Pour the wet ingredients in to the dry mix and stir together, just enough to combine all of the ingredients, don't over mix the batter.
    5. Spoon the mixture into the tins or cases and sprinkle the reserved cheese on top.
    6. Bake in the middle of the oven for until golden, approx. 20 minutes. Turn out and cool on a wire rack.
