Spinach and Artichoke Dip in Pizza Dough Ring

    This delicious spinach and artichoke dip is baked inside a dough ball ring making it a fun festive appetizer for the holidays or when entertaining friends.

    • 1/4 cup extra-virgin olive oil, divided
    • 455g pizza dough
    • 2 tablespoons grated Parmesan cheese
    • 1 (250g) package low-fat cream cheese, softened
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup cooked spinach, squeezed dry and finely chopped
    • 1/2 cup artichoke hearts, drained and chopped
    • 2 teaspoons crushed garlic
    • 1 teaspoon red chilli flakes, or to taste
    • 1/2 teaspoon salt, or to taste
    • 1/4 teaspoon fresh ground black pepper, or to taste

    1. Preheat oven to 175 degrees C. Grease a round baking dish with 1 tablespoon olive oil.
    2. Shape pizza dough into a log and cut into 16 pieces. Roll pieces into balls and place around the edges of the dish. Brush with remaining 2 tablespoons olive oil and sprinkle with 2 tablespoons Parmesan cheese.
    3. Combine light cream cheese, mozzarella cheese, 1/2 cup Parmesan cheese, spinach, artichoke hearts, garlic, red chilli flakes, salt and pepper in a bowl. Spoon into the middle of the dish.
    4. Bake in the preheated oven until pizza dough is puffed up and golden, about 25 to 30 minutes.

    Cook's Note:

    Dip can be doubled and saved for a second batch by adding another brick of cream cheese and the other ingredients, which will use an entire can of drained artichoke hearts and a full bag of baby spinach that has been cooked in the microwave and drained well and an entire 250g package of shredded mozzarella.
