Low-Carb Cheesy Cauliflower and Spinach

    This super-simple side dish recipe helps keep the carbs at bay while serving up cauliflower, spinach and creamy Swiss cheese.

    • 2 3/4 cups cauliflower florets, broken into bite size pieces
    • 60g spinach leaves
    • 30g butter
    • 1 teaspoon sea salt
    • 2 spreadable Swiss cheese wedges

    1. Process cauliflower through a food processor to get 2 cups of cauliflower grounds that resemble coarse breadcrumbs.
    2. Combine cauliflower, spinach, butter and salt in a large pot over low heat. Cover and cook until cauliflower is soft and spinach has wilted, 5 to 7 minutes. Stir in cheese wedges until the cauliflower and spinach are coated and no cheese clumps remain.
