Sultana and Honey Oat Loaf

    This delicious and wholesome sultana, honey and oat loaf is great served warm or cold spread with butter. Store it in an airtight container for up to 4 days.

    Ingredients
    Serves: 10 

    • 1 cup (150g) white self-raising flour
    • 1/2 cup (75g) plain wholemeal flour
    • 1/2 cup (110g) brown sugar
    • 2/3 cup (60g) rolled oats
    • 1 cup sultanas
    • 2 eggs
    • 1/3 cup (80ml) milk
    • ½ cup (125ml) vegetable oil
    • 1/4 cup (90g) honey

    1. Preheat oven to 180 degrees C. Grease 12cm x 22cm loaf pan; line base and long sides with baking paper, extending paper over long sides.
    2. Sift flour into large bowl; stir in sugar, oats and sultanas. Add eggs, buttermilk, oil and honey and stir to combine.
    3. Spread mixture into prepared pan. Bake about 1 hour or until cooked when tested with a skewer. Stand loaf in pan 10 minutes before turning out onto wire rack to cool.
