Chocolate Chip Muffins

    These moreish chocolate chip muffins are simple to make and a hit with the kids. Get the kids to help you make them and pack them in their lunch boxes the following day.

    Makes: 12 muffins

    • 2½ cups (375g) self-raising flour
    • 100g butter, diced
    • 3/4 cup (165g) caster sugar
    • 1 1/4 cups (310ml) buttermilk
    • 1 egg
    • 3/4 cup (135g) milk chocolate chips

    1. Preheat oven to 200 degrees C. Line a 12-hole (1/3 -cup) muffin pan with paper cases.
    2. Sift flour into a large bowl; rub in butter. Stir in sugar, buttermilk and egg. Do not over-mix; mixture should be lumpy. Stir in choc chips.
    3. Divide mixture into prepared pan holes; bake for 20 minutes or until cooked when tested with a skewer. Stand muffins in pan 5 minutes before turning out onto a wire rack to cool.
