Choc-cherry Ice-cream Bombs

    These choc-cherry and coconut ice-cream bombs are so easy to make but are sure to impress! Serve them with toothpicks for a dessert finger food or in bowls as a dessert.

    Serves: 12 

    • 1 litre chocolate ice-cream, softened
    • 2 (50g) Cherry Ripe (R) bars, finely chopped
    • 2/3 cup desiccated coconut
    • 100g dark chocolate, melted

    1. Place softened ice-cream in a large bowl; fold in chopped Cherry Ripe and half the desiccated coconut.
    2. Cover and freeze for 1 hour. Scoop ice-cream into small balls and roll in remaining desiccated coconut. Place ice-cream bombs on a tray; freeze for 30 minutes.
    3. Drizzle melted (and cooled) chocolate over the ice-cream bombs just before serving.
