Gluten-Free Brownies

    These simple gluten-free brownies made with melted dark chocolate and ground almonds are a perfectly moist gluten-free cake or dessert.

    Ingredients
    Serves: 16 

    • 1 cup (220g) caster sugar
    • 125g butter
    • 2 large eggs
    • 1/2 cup (70g) almond meal
    • 50g dark chocolate, melted
    • 1 tablespoon unsweetened cocoa powder
    • 1/2 teaspoon gluten-free baking powder
    • 1/2 teaspoon vanilla extract
    • 1 cup (170g) gluten-free chocolate chips

    1. Preheat oven to 190 degrees C. Line a 20cm square cake tin with baking paper.
    2. Beat sugar and butter together in a large bowl with an electric mixer until light and creamy. Beat in eggs until smooth. Stir in almond meal, melted chocolate, cocoa powder, baking powder and vanilla extract. Fold chocolate chips into the batter.
    3. Pour batter into the prepared cake tin.
    4. Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 25 to 30 minutes. Cool for 10 minutes on a wire rack before cutting into squares.

    Cook's Note:

    Try substituting walnuts or dried fruit for chocolate chips for something a little different.
