Dark Chocolate and Honeycomb Mouse

    This decadent dessert is perfect for entertaining. A rich, silky chocolate mousse with crunchy honeycomb shards is sure to impress your dinner guests!

    Serves: 4 

    • 200g good quality dark chocolate, chopped
    • 1/3 cup thickened cream
    • 1 1/2 teaspoons powdered gelatine
    • 1 1/2 tablespoons boiling water
    • 2 eggs, separated
    • 2 (50g) bars chocolate covered honeycomb (Violet Crumble)
    • 3/4 cup thickened cream, whipped

    1. Combine chocolate and 1/3 cup cream in a small saucepan; stir over low heat until smooth. Dissolve gelatine in the hot water then add to chocolate mixture. Whisk egg yolks into chocolate mixture then transfer mixture to a large bowl. Cool.
    2. Beat egg whites in a small bowl with electric mixer until soft peaks form.
    3. Finely chop one honeycomb bar. Fold whipped cream into chocolate mixture, then fold in egg whites, in two batches. Gently fold in finely chopped honeycomb bar. Divide mousse among four ¾-cup (180ml) serving glasses. Cover and refrigerate 3 hours or until set.
    4. Just before serving, chop remaining honeycomb bar into shards. Serve mousse topped with honeycomb shards.
