Fig and Pistachio Bircher Muesli

    Start the day the right way with a healthy and filling bowl of bircher muesli. Make it the night before and just add toppings the following morning for a quick and easy breakfast.

    Serves: 4 

    • 2 cups rolled oats
    • 2/3 cup bran flakes
    • 1 1/2 cups apple juice, no added sugar
    • 1 cup low-fat natural yoghurt
    • 1 cup reduced-fat milk
    • 1/2 cup chopped dried figs
    • 1/3 cup dried cranberries
    • 2 tablespoons honey
    • 1/3 cup pistachio kernels
    • 4 small fresh figs

    1. Combine the oats, bran flakes, juice, yogurt, milk, dried figs, dried cranberries and half of the honey in a medium bowl. Cover with cling wrap. Refrigerate overnight.
    2. Place muesli in serving bowls. Sprinkle with nuts. Top with fresh fig quarters and drizzle with remaining honey.
