Nectarine and Apple Conserve

    Make the most of in-season yellow nectarines in this flavoursome conserve. Make sure your nectarines are nice and ripe. Nectarines can be replaced with white nectarines or yellow peaches if you prefer.

    Makes: 7 cups

    • 1kg fresh ripe yellow nectarines
    • 1kg green apples, peeled, cored, finely chopped
    • 3 1/2 cups water
    • 4 1/2 cups white sugar
    • 3 teaspoons finely grated orange rind

    1. Halve nectarines and discard stones. Chop nectarines coarsely. Combine nectarines, apples and water in a large saucepan over medium heat. Bring to boil and simmer, covered, for 30 minutes.
    2. Measure fruit mixture, allow 3/4 cup sugar to each cup of mixture.
    3. Return fruit mixture, sugar and orange rind to pan and stir over heat, without boiling, until sugar is dissolved. Boil, uncovered, without stirring, about 30 minutes or until conserve jells when tested (see note).
    4. Pour conserve into hot sterilised jars and seal immediately.


    To test if the conserve is ready, place a teaspoon of the conserve on a saucer that has been chilled in the freezer. If the conserve gels on the plate, its ready. If it is still runny, cook a little longer then retest.
