Poached Lobster

    This basic recipe for a flavoursome broth with white wine, paprika and lemon zest is perfect for poaching your own lobster at home.

    Serves: 4 

    • 3L water
    • 1 cup dry white wine
    • 1/4 cup salt
    • 1 tablespoon whole white peppercorns, coarsely ground
    • 1 tablespoon paprika
    • 2 teaspoons finely grated lemon rind
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/4 teaspoon cayenne pepper
    • 2 bay leaves, crushed
    • 2 (500g) whole lobsters

    1. Bring water to a boil in a tall stockpot. Add white wine, salt, peppercorns, paprika, lemon rind, garlic powder, onion powder, cayenne pepper and bay leaves. Stir and return to a boil.
    2. Lower lobsters carefully into the stockpot. Cover and cook over medium heat until lobsters are bright red and claws are easily pulled off, about 10 minutes.
