Overnight Oats with Milk

    Simply mix oats with milk, lemon rind and vanilla extract before going to bed to start your morning off right with overnight oats.

    Ingredients
    Serves: 4 

    • 2 cups (500ml) low-fat milk
    • 2 cups (160g) rolled oats
    • 1 teaspoon finely grated lemon rind
    • 1/2 teaspoon vanilla extract
    • 2 fresh apricots, chopped
    • 1/3 cup (45g) pine nuts, toasted
    • 2 tablespoons (optional) agave nectar

    1. Combine milk, oats, lemon rind and vanilla extract in a large bowl. Cover and refrigerate until oats have absorbed milk, 8 hours to overnight.
    2. Stir apricots, pine nuts and agave nectar into the oats.

    Cook's Note:

    Use a milk substitute instead of the milk if preferred. Other seasonal fruit can be substituted for the apricots. Agave can be replaced with 2 teaspoons honey, if preferred.
