Creamy Raspberry Tiramisu Trifle

    This delicious raspberry dessert is a cross between a tiramisu and a trifle made with raspberries, mascarpone and sponge fingers. You can prepare this dessert in advance, making it perfect for entertaining.

    Ingredients
    Serves: 8 

    • 1/4 cup (55g) caster sugar
    • 1 tablespoon lemon juice
    • 1 teaspoon water
    • 250g mascarpone cheese
    • 3 eggs, separated
    • 90g sponge finger biscuits
    • 250g fresh ripe raspberries, crushed
    • 20 fresh raspberries

    1. Combine 1 tablespoon sugar, lemon juice and water in a bowl.
    2. Combine mascarpone, egg yolks and remaining sugar in a large bowl; beat with an electric mixer until smooth and creamy.
    3. Beat egg whites in a glass, metal or ceramic bowl until until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Carefully fold into mascarpone cream.
    4. Dip 2/3 of the sponge fingers in the lemon juice mixture. Layer the sponge fingers dipped side up and dry side down in a rectangular serving dish. Add a layer of half of the crushed raspberries, followed by half the mascarpone cream. Add another layer of soaked sponge fingers, followed by raspberries and the rest of the mascarpone. Garnish with whole raspberries. Refrigerate for 2 hours. Serve.

    I found that the small amount of liquid used for soaking the sponges was not enough to make this the consistency of Tiramisu and it was left somewhat chewy. Also I cannot help noticing that the photo shows rather more than 20 raspberries on the top....!
